20 years ago I started catering small parties in people's homes. Everyone was so excited that they made menu development extremely easy. They would just tell me they wanted the Portobello Soup, Chicken Strudel, Smoked Prime Rib and French Cheesecake. Then I would simply fill in the gaps with whatever I wanted.
For example I would often serve scallops and so many people would tell me that they would never order them in a restaurant because it sounded gross or they hate seafood but LOVED the scallops. I then realized that words taste really bad to some people.
